Onion Rings

Traditional onion rings are made with refined bleached flours and full of trans fats that are no good for your heart! This version is a much healthier but incredibly delicious indulgence for those fun occasions! 

 

Here's what you're going to need:

  • 1/2 cup flour. I used coconut flour but you could try whole wheat and panko crumbs mixed. 

  • Seasonings: approximately 1 tsp. salt, 1/2 tsp. black pepper, 1/2 tsp. Italian seasoning, and 1/4 tsp. ground red pepper 

  • 2 eggs

  • 1 large yellow onion

  • Coconut Oil

  • Optional: I added nutritional yeast for extra flavor, vitamins, minerals, and protein! Nutritional yeast looks like little yellow flakes full of health benefits. Nutritional yeast is typically found at a specialty health food store. 

On a plate, mix the flour, seasonings, and nutritional yeast (if you decided to walk on the wild side and use it). 

 

In a separate bowl, beat eggs using a whisk until completely mixed. 

 

Peel and slice onion and separate rings. Heat a skillet over medium heat and add coconut oil. Oil should fill the skillet about 1/4" high. 

 

Dip onion ring in egg, then toss in flour, and place in hot skillet. Wait about 1-2 minutes until golden brown before flipping. 

 

I know, it looks like a lot of oil but it's better than deep frying and they are onion rings! 

 Once golden brown and crispy place on a plate and allow to cool before enjoying!
