Snobby Joes

This lentil version of Sloppy Joes is so delicious you will never go back! Lentils have fiber that digests really slow to keep you full throughout the day and are an excellent source of protein. Don't be shy... give them a try! :) 

 

Here's what you're going to need:

- 2 cups lentils, dry

- 1 yellow onion

- 1 small jar tomato sauce

- 1 6oz. can tomato paste

- 2 Tbsp. yellow mustard

- 2 Tbsp. maple syrup 

- 1 packet or Simply Organic Sloppy Joe Seasoning**

- 1/3 cup cheese 

- Whole grain buns or tortillas

 

**The seasoning can be found at most health food stores, some generic grocery stores, and online. You can make your own homemade seasoning mix that is similar but I find the pre-made mix to be very convenient! 

 

Directions: Cook lentils in boiling water until slightly soft (about 15min), drain water, and set aside. Warm a skillet with 1 tablespoon of oil. Dice onion and cook in skillet until slightly browned and soft. Add lentils, sauce, tomato paste, maple syrup, seasoning, and mustard. Mix well and set aside. Build a sandwich with bread or tortilla, cheese, and lentils and grill on both sides until golden brown and cheese is melted.  Serve warm and enjoy!

 

* You can also add diced carrots and mushrooms for extra veggies!
