Whole Grain Waffles

Belgian waffles that are HEALTHY and DELICIOUS?! Yes please! These were just as easy to make as traditional waffles but made with ingredients that are actually good for you!!! 

 

Have you tried cooking with quinoa flour? Don't worry, this was my first time too! Quinoa flour is made with whole grains that keep you fuller much longer than white flour! So this can be a great tool to help manage your weight and keep your digestive tract healthy. 

 

Makes about 6 waffles

 

Ingredients:

2 cups quinoa flour (I used Bob's Red Mill Organic Quinoa Flour)

1 1/2 Tbsp. baking powder

2 tsp. cinnamon

1/2 tsp. sea salt

4 eggs

2 ripe bananas

1/2 Tbsp. vanilla extract

2 cups vanilla almond milk (or other milk) 

Coconut oil or nonstick spray 

 

Optional toppings: nut butter, fresh fruit, maple syrup or honey, nuts, etc.

 

Directions: in a bowl, mix together quinoa flour, baking powder, cinnamon, and sea salt. In a separate bowl, lightly beat eggs then add bananas and mash. Add vanilla and milk and mix until smooth. Add to dry ingredients and mix until clumps are gone. Heat waffle maker and cover with nonstick spray or oil. Make sure you put plenty so it doesn't stick :) 

 

Here's how my first round turned out when I didn't use enough oil... 

 

 

 

A big mess... but it was still delicious anyway... But after I got through the first mess up... it all worked out wonderfully! I topped my waffle with almond butter, honey, apples, and cinnamon.  

 

The next day I also tried a savory one topped with a fried egg and avocado! mmmMMMMmmm!!
